About Thea Willgress
Thea previously was Pastry Chef at the world-renowned Sooke Harbor House, regarded as one of the top 10 restaurants in the world, and highly-acclaimed for its exclusive use of locally harvested raw foods; Cioppino’s, with current Chef of the Year Pino Posterero; Umberto’s, ‘C’, the Vancouver Club, and several other world-class restaurants.
In 2009 Thea’s wedding cake business had grown to the level she was able to resign her post at the Vancouver Club to devote herself full-time to Sweet Thea, and, in 2009, dedicated herself to wedding cakes. Dozens of happy brides met with Thea in her little consultation room in South Surrey, and booked her beautiful cakes, cupcakes, and dessert buffets for their special day – Sweet Thea Cakes was successfully launched.
In summer 2010, Thea’s husband Laurie began bringing her style of ‘fine-dining’ desserts to a few Farmers Markets. The response was immediate, as happy eaters gobbled up delicious tarts, cookies, and pies, making Sweet Thea a top prepared food vendor at several markets. Laurie quit his job, and started working with Thea full-time. A huge part of the 2010 season was an inaugural appearance at Circle Craft, selling German-themed Christmas baking (Lebkuchen, Stollen, and Fruitcake) to considerable acclaim.
In 2011 Thea continued to do a limited number of beautiful wedding cakes (awarded ‘Top Designer’ honors by Wedluxe Magazine for her efforts). Busy enough to move from a home-based bakery to a new commercial space in Langley, Laurie went into Farmers Markets from Ambleside to Maple Ridge, Steveston to Langley, and quickly developed a loyal fan club of happy eaters.
October 2013 was another milestone – we put up a sign at the bakery, and a little front space so our customers can stop by our little bakery. We are proud to be part of the Langley community, and even prouder to be part of the network of Farmer’s Markets around the lower mainland.
This year (2016) we added our presence to the Tsawwassen Ferry Terminal to provide our fresh baked snacks and tasty gifts to travelers and workers of BC Ferries. Thea continues to experiment and bring new flavours to our growing and dedicated fans. YUM!
