About the Bakery
Every day our goal is to provide you with the best tasting product. We do this by using the best ingredients possible. Everything in our bakery is made from whole ingredients, from scratch, and is free of preservatives. We honour traditional methods and recipes and it shows.
Thea’s love of baking and pastry led her train under the watchful eye of master pastry chef George Wagner at Nanaimo’s Malaspina College in 1994. Upon graduation, she worked at various acclaimed culinary posts – including several years at the award-winning Sooke Harbour House. In 2006, after completing her Red Seal certification, while employed by the Vancouver Club, Thea started her home based wedding cake business, Sweet Thea Cakes.
Laurie Mercer spent several decades in the music industry, starting as a concert promoter for hundreds of touring bands, and well as serving as manager for punk legends D.O.A. and booking agent for artists as varied as John Cale, Violent Femmes and Skinny Puppy, and was the founder of Music West. In 1999 he purchased the extensive Jack Cullen 78rpm library from CKNW radio, and was an eBay powerseller when he met Thea on leap day 2008.
Thea’s keen creative desire combined with Laurie’s entrepreneurial skills, led to the opening of a permanent facility in an industrial park in Langley in 2010. Thea continued to do hundreds of wedding cakes every year, while Laurie took Thea’s quality baking into Farmer’s Markets and Special Events around the province. Thea debuted her line of traditional Christmas Baking at Circle Craft in 2011.
Inspired by the Old World values passed on by Chef Wagner, Thea continues to create traditional baked goods while tweaking recipes for contemporary tastes, using butter and quality ingredients to achieve the best possible experience for the thousands of eaters who regularly seek out her treats.
As of summer 2018, Thea’s baking is available at our little storefront in Langley, our kiosk inside the Tsawwassen Quay Market at the B.C. Ferries terminal, and farmers markets and special events throughout the season. Brambles Bistro in Abbotsford, Koko Monk Chocolates in Kitsilano, and Brix Restaurant in Yaletown also occasionally feature Sweet Thea treats.

Special orders can be picked up at the bakery or any farmers markets/events we are participating in. Please note – you cannot pick up tiered cakes or other large fragile orders at farmers markets, as conditions may affect the products.
In the Spring of 2018, Thea began creating a line of Hearth Breads – looking for quality European-style, naturally leavened, breads, with great results. In June 2018 she decided to discontinue working on wedding cakes, to allow time to pursue her passion for bread and other pastries.
We are open 8am-4pm, Monday to Saturday. We are closed Sundays and statutory holidays.
